5-6 ripe peaches, peeled and sliced
1 1/2 cups sugar
Juice of 1 lemon
1 1/2 tsp vanilla extract
2 cups heavy cream
In a large bowl mix together peaches, sugar, lemon juice and vanilla. Let sit for about 15 minutes, stirring occasionally until the sugar is dissolved and peaches have released their juices. In a blender or food processor, puree peach mixture until smooth. Add heavy cream to peach mixture and stir well. Churn according to manufacturers directions (for my electric ice cream maker it takes about 20 minutes). Allow ice cream to harden in freezer for a few hours before serving. Enjoy!
