Garlic Roasted Green Beans with Shallots


1 lb fresh green beans
1 shallot, peeled and cut into slivers
2-5 cloves garlic, peeled and cut into thin slices (start with 2, eyeball it and see if more needed)
2 Tbsp olive oil
1 tsp salt
fresh ground black pepper
lemon zest (optional)

Preheat oven to 450.

Trim ends of green beans. If beans are long, break into pieces about 2 inches long.

Peel and cut shallot and garlic. Add to beans.

Add olive oil, salt and pepper and toss all until well coated.

Arrange beans in a single layer on roasting pan. Roast 12-15 minutes or until beans are slightly shriveled and shallots and garlic are lightly browned.

Sprinkle lemon zest (if using) onto beans; toss. Enjoy!
